I recently had the pleasure of attending the launch of Catelli’s new gluten-free macaroni at George Brown College. Hosted by the very charming Chef John Higgins, the school’s esteemed director, judge on the Food Network’s Chopped Canada and former chef for the Queen Mother – the event was a friendly gathering of food bloggers in one of the George Brown test kitchens. Setup like a Tepenyaki table (only with some seriously heavy duty appliances and much more space in which to manoever), the chef and his staff worked their magic in a beautiful kitchen surrounded on three sides by bar height counters topped with lovely place settings, and of course delicious gluten-free tastings.

While most higher quality gluten-free pastas can generally fool most people (the first time my dad had brown rice pasta, his skepticism quickly turned into delightful surprise!), it does take close monitoring and some specific steps. If overcooked, even just for a couple minutes, or not rinsed, it can easily turn into a mushy and starchy mess.

Now I’ve put Catelli to the test before (yes, it was a “test,” and not a mistake because I started watching TV and forgot it was on the stove…). I left the pasta in a pot of hot water significantly longer than it should have been. To my surprise, this stuff held up really, really well. It was still very palatable, and still held good structure without sticking together and surprisingly, did not require a cold water bath. Catelli is the only pasta that I have tried thus far that has been able to withstand this torture test!

The pasta likely gets this unique quality from its blend of four grains – white rice, brown rice, corn and quinoa. Produced in a dedicated gluten-free facility, Catelli’s pasta line (including spaghetti, penne, and my favourite, fusilli) has earned the Canadian Celiac Association’s Gluten-Free Certification – so we can all enjoy without worry!

While I was at George Brown, Chef Higgins shared some great pasta cooking tips which I’ll be sharing in tomorrow’s post. I love the tips on finishing your pasta in sauce, and when you should and should NOT put oil in your water (check back for more!)

    I love this pasta, it isn’t heavy, which is fabulous, as I gradually make my way to a gluten free life style change, I am so grateful that there is a variety of companies, bringing in new foods and it is nice to know that Catelli, is on the top for having gluten free pasta, just need lasagna noodles now

    My favourite way to prepare pasta is the traditional Gluten-Free spaghetti (love spinach flavour) with meat balls and tomato sauce covered in mozzarella cheese. Yummy! I have this every Sunday and you can tell I love spaghetti by my email address!

    Gluten free Catelli Pasta is the best gluten free pasta I have had. Before I couldn’t have gluten I loved Pasta we had it at least 2 a week. I thought that being gluten intolerant it was the end of my pasta days and after trying different kinds I was disappointed but when I tried the Catelli gluten free pasta I was amazed that it tasted like regular pasta and didn’t get soggy like the rice pasta did. Now I eat it just like I did before and my family who are not gluten intolerant like it too.

    Puttanesca with grape or cherry tomatoes is the best. It takes more time and effort to prepare but the taste is worth it. I sometimes bake garlic with olive oil for dipping with bread to go with the pasta, too. Lastly, I pair it with Lemon Iced Tea recipe from Real Simple that just elevates the whole experience with Earl Grey decaf as the black tea base. With the tanginess of the tea contrasting with the sour sweet of the puttanesca and subtle sweetness of the garlic, it beats dining out anytime!

    My favorite way to prepare pasta is with an good tasting speghetti sauce…plain and simple – Comfort food. I’m also trying to learn new recipes for pasta salads as a great option for potlocks

    What a great blog! I have discovered so many ideas here that I no longer have to wish I didn’t require gluten free products for my daughter! Catelli has always been my favourite pasta, and now she will be able to enjoy it as well. Victoria thank you for posting the gluten-free lasagna recipe – I will definitely have to try it!

My favorite way to prepare pasta is to put a layer of ground beef fried with garlic and onions in the bottom of a roast pan.My next layer is cooked macaroni to which I have added about 1/2cup of cheese whiz.Next I cover this with canned tomatoes and layer the top with cheddar cheese and bake until the whole dish is bubbly and hot.My family and friends love it!
