Well, just got back to nurse my feet from a very hectic day at the Whole Life Expo on day 2 of the show! I had the pleasure of giving my “Gluten-Free Living Made Easy” talk this afternoon to a packed crowd with standing room only! Thanks to everyone who came out to listen and who came up to speak to me over the past two days.
I’ve had some very interesting conversations with a few people this weekend. A lot of people have commented to me recently about the difference between wheat in Europe and wheat in North America. Given that North American wheat has been hybridized and genetically modified, whereas European wheat has not, it’s no surprise that its digestability has changed as well. I’m going to be exploring this further in the next month or so and hope to share the insights I learn with all of you once I do.
